Off to buy some bison!

May 10, 2008 · 1 Comment

We’re off to our lodge today and it looks like it’s going to be a glorius day. The sun is streaming through the window as I write this, beckoning me to hurry up and get outdoors!

One of our stops on the way to the lodge will be at a farm in the area to buy some organically raised bison. I found a recipe for ribs that I want to try – and some nice meaty bison ribs will fit the bill.

Bison, or buffalo meat provides more protein and nutrients with fewer calories and less fat than beef. It has also been shown to contain more iron. The bison meat we buy is raised without drugs, chemicals, or hormones.

You can check out a nutritional comparison of bison to other meats and fish at bisoncentral.com.

Apart from the nutritional value of bison, we simply enjoy its taste. Although we don’t eat a lot of red meat, we use bison stewing meat, bison steak, bison burgers – mainly in the summer at the lodge. My mouth is watering just thinking about it!
